1. Agedashi Tofu
Lightly battered and fried silken tofu served in a warm dashi broth with grated daikon and ginger. At vegan restaurants, the dashi is kombu-based. It's one of Japan's most comforting dishes — crispy outside, impossibly soft inside.
2. Vegan Gyoza
