Japanese vegan food beyond sushi — gyoza, tofu, soba, wagashi, and more
Vegan sushi gets the spotlight — and it deserves it. But Japan's plant-based food culture extends far beyond sushi. From ancient temple cuisine to modern street food innovations, here are 10 Japanese vegan dishes that showcase the incredible depth of plant-based eating in Japan.

1. Agedashi Tofu

Lightly battered and fried silken tofu served in a warm dashi broth with grated daikon and ginger. At vegan restaurants, the dashi is kombu-based. It's one of Japan's most comforting dishes — crispy outside, impossibly soft inside.

2. Vegan Gyoza

Pan-fried dumplings filled with cabbage, mushrooms, ginger, and garlic. The crispy bottom and juicy filling make them addictive. Several specialty shops in Tokyo now serve vegan-only gyoza.

3. Zaru Soba

Cold buckwheat noodles served on a bamboo mat with dipping sauce. The noodles themselves are typically vegan — just verify the dipping sauce (tsuyu) is made with plant-based dashi.

4. Yudofu

Hot pot tofu in kombu dashi broth. A Kyoto specialty that's pure simplicity — and pure deliciousness.

5. Goma Tofu

Sesame tofu — not made from soybeans but from ground sesame seeds. Silky, nutty, and rich. A shojin ryori staple.

6. Takoyaki (Vegan Version)

The famous Osaka street food, reimagined with mushrooms or konjac instead of octopus. Crispy outside, gooey inside, topped with sauce and aonori seaweed flakes.

7. Onigiri

Rice balls wrapped in nori seaweed. Vegan fillings include umeboshi (plum), kombu, and shiso. Available everywhere for under ¥200.

8. Inari Sushi

Sweet, seasoned tofu skin pockets filled with sushi rice. One of Japan's oldest vegan sushi forms — available at convenience stores, supermarkets, and restaurants.

9. Kenchinjiru

A hearty root vegetable soup from Zen Buddhist tradition. Made with burdock root, daikon, taro, and tofu in a clear kombu broth. Perfect winter comfort food.

10. Kinako Mochi

Soft mochi rice cakes dusted with kinako (roasted soybean flour) and sugar. Simple, sweet, and naturally vegan.

And of course, don't miss the main event — vegan sushi. The 11-piece course at Veggie Sushi Japan near Asakusa combines many of these Japanese culinary traditions into one unforgettable meal.
